Our Coffee Subscription Pick: March 16 - 31

Classic Single Origin - Mexico.

Up until now, you’ve enjoyed my picks of the season – so, this week I’ve turned it over to Mathew Hill, Salt Spring Coffee’s head in-house roaster and resident coffee geek.

Right now, our Classic Single Origin - Mexico is at the peak of its harvest season, which runs from approximately December – April ever year. With its measured acidity, and full body it’s a favourite of those who enjoy a medium-to-dark roast.

The Co-op

Cooperative Cirsa is one of the few co-ops that we work with where the coffee we purchase is not certified direct trade, but fair trade. This means have yet to visit Cooperative Cirsa and that we purchase only small batches from the co-op’s distributor.

Cirsa is known to grow organic Arabe and Bourbon, which are varietals of the Arabica coffee plant; time and again their coffees cup very well, which is why we’re happy to include this Mexican brew in the Salt Spring Coffee fold.

Located in the State of Chiapas, which is Mexico’s southernmost State, Cirsa has 510 members and an established women’s group, Union de Mujeres Indigenas de la Region de Simojovel de Allendewhich, which is great to see for a co-op of this size.
