Our Coffee Subscription Pick: June 1 - 15

Our Nicaragua Culinary Single Origin coffee from the CECOCAFEN co-op is a familiar coffee for us only this year we’ve explored a new roast. As we alluded to in our last subscription post, a light roast can often bring out the flavours of a coffee that a dark roast covers up.

We’ve been purchasing this coffee from the CECOCAFEN co-op situated in the Matagalpa region of Nicaragua for a few years now. Every year the harvest is a little bit different with plant variety, soil type, altitude and the farmer’s touch playing an important role in the growing of the coffee.

CECOCAFEN was also one of our very first Fair to Farmer Direct relationships. As a secondary cooperative, they sell quality coffees on behalf of eleven cooperatives and today represent approximately 2,637 small-scale coffee farmers of which more than 700 are women.

Let the light roast cool.

This coffee is a classic example of what a Nicaraguan should be: smooth and balanced with medium acidity. As the coffee cools, you’ll notice that it becomes much more complex with key flavours of almond, chocolate and cherry rising to the surface. In letting the coffee cool, a subtle sweet citrus acidity will also reveal itself.
