Byron Corrales Martines (of Nicaragua) typically processes his coffees by the washed method, only here he’s decided to change it up. Byron's applied the natural process to his Maracaturra varietal to create a remarkably fruity coffee.
Dry processing or “natural processing” as we refer to it, is one of the oldest ways to process coffee. Whole coffee cherries are dried on a raised bed or patio with full exposure to the sun for approximately 10-14 days. Once the coffee cherries are completely dry, they are then processed gently to remove the dry fruit casing from the seed. The result is a beautiful green coffee seed with intense fruit flavour, dried naturally by the sun.
